Tzu Chi has definitely changed my perception of vegetarianism. Back when I relied on the food choices of the school dining halls, I felt bad for people that were vegetarian. Their only options would be salad or veggie wraps, but Tzu Chi really showed how there are more options! Going to my very first cooking class, it was fun to work in teams and see how the same ingredients could result is such different outcomes. Ma Po Tofu, the main dish, that we learned to make from SG was scrumptious! I have not been able to purchase the special spices and sauces, but once I do, I definitely plan to make it at home. My favorite parts of the event was when everyone was scrambling around trying to find the specific sauce/spice they needed and at the end, when our finished products were all displayed nicely.

I had a really fun time at the cooking class. It felt a bit like being on Iron Chef or some awesome cooking show. This was the first time any egg-creation of mine has ever turned out visually presentable (thanks to Jasmine's pro-skills). I  learned a lot from the Sugu, but I also learned a lot of other tips from other TC members, such as wiping the plate to make the dish look better. My favorite dish to make (and eat) was the mapo tofu. I liked how we got to try everyone's different creations--each dish was slightly different, and that made it more fun to eat. I think when I gain access to a kitchen, I'm going to try to make the mapo tofu again. That was super yummy.
The presentation on vegetarianism made me want to cut down my intake of meat. I'm not sure if I have enough self control/willpower to go vegetarian, but I am currently trying to take it one step at a time, such as eating meat only once or twice a week.

This was my first vegetarian cooking class and it exceeded beyond my expectations. The Shr Gus prepared enough pans and portable cooking stoves for us to divide into groups of three. My teammates, Michael and Alex, were both very enthusiastic about cooking, and I could tell that from the laughter across the room, that everyone was enjoying the class as well. The entire time I was drooling over the meals we've cooked. In two hours, we produced enough dishes to feed twenty people, and even enough for seconds and leftovers! In this class, we not only sharpen our cooking skills and feed our tummies, but we also do a good deed by promoting vegetarianism. I definitely look forward to more cooking class in the future. Let us be vegetarian!
